the softest molasses cookies
Everyone has a recipe for molasses cookies but this one is incredibly tender and delicious. It is by far the best that I've made! Molasses and brown sugar provide an excellent afternoon energy-boost.
Ingredients:
1 cup packed brown sugar
3/4 cup butter
1/4 cup molasses
1 egg
2 1/4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon salt
3 tablespoons granulated sugar
1. Heat oven to 325°F. In a mixing bowl, beat brown sugar, butter, molasses and egg until well-blended. Stir in remaining ingredients except sugar.
2. Shape dough into 1 1/2-inch balls with 1-2 tbsps of batter. Dip tops into some white sugar. On ungreased cookie sheet, place balls, sugared sides up, spaced apart. *Do not flatten*
3. Bake 14 to 16 minutes or just until set and cookies are not moist. Immediately remove from cookie sheet and place onto cooling rack.
