Bob's Red Mill oat cookies


As a member of the food blogging community, I receive food products on an ongoing basis. Recently, I was sent a variety of hearty baking ingredients from Bob's Red Mill. I have always enjoyed cooking with Bob's Red Mill products, as the possibilities are endless! This is a company that I truly stand behind. The products are all manufactured under one roof, in Milwaukie, Oregon. The company boasts a state-of-the-art milling, packaging and distribution facility, where quality control is central. All of Bob’s Red Mill products are free of preservatives and chemical additives, which is another reason why I am proud to use these ingredients in my recipes.

In this recipe, I use two of my most favourite ingredients to make these easy and delicious no-bake chocolate oat cookies. By adding just two tablespoons of ground flaxseed, I am able to add 4 grams of fiber to the recipe, the equivalent of 1.5 cups of cooked oatmeal! Ground flaxseed contains high levels of natural antioxidants called lignans. To get the amount of lignans that are in just two tablespoons of flaxseed meal, you would need to eat about 30 cups of fresh broccoli! Flax meal (if manufactured in a nut-free facility) is also one of the few nut-free ways to get 2400 milligrams of omega-3 fatty-acid (two tablespoons flax meal).

Ingredients:

5 tablespoons cocoa

2 cups white sugar

2/3 cup butter

1/2 cup milk

3 cups rolled oats (Bob’s Red Mill)

1 cup shredded coconut

2 tablespoons ground flaxseed (Bob’s Red Mill)

1 teaspoon vanilla extract

Directions:

1. Combine first four ingredients in a saucepan and bring to a boil.

2. Let mixture boil for 5 minutes.

3. Reduce heat and add the remaining ingredients.

4. Mix together and drop about 2 tablespoons on wax paper or place in mini muffin tin.

5. Place in fridge until well set.

Plating:

Drizzle melted chocolate over the cookies, garnish with mint.
