Crispy Parmesan edamame
My all time favourite evening snack involves steaming a big pot of edamame. I decided to branch out and try to liven up my seemingly routine healthy treat. I tossed the edamame with some olive oil, Parmesan cheese, salt and pepper. Voila!

Ingredients:
2 cups frozen shelled edamame
1 tbsp olive oil
1/4 cup grated Parmesan cheese
salt and pepper to taste
Directions:
1. Preheat the oven to 400 degrees F. Put the edamame in a strainer and rinse with warm water to thaw.
2. Line a baking pan with parchment and place the edamame on. Gently toss with all ingredients. Place in the oven for 10 minutes or until Parmesan begins to crisp.
