Spinach and Pine Nut Farfalle Pasta
1/2 cup olive oil
1 garlic clove, pressed
2 cups fresh spinach, chopped
1/2 cup pine nuts, toasted
1 lb farfalle pasta
2/3 cup parmesan cheese, grated
salt and pepper
1. Heat oil in large skillet over medium heat. Add garlic and cook, for one minute.
2. Flake in spinach, stirring for about 4 minutes or until just wilted.
3. Cook Farfalle as directed on package and drain.
4. Toss with spinach and toasted pine nuts. Salt liberally and add pepper for extra flavour. Top with parmesan cheese.
